Most editors use Word Track Changes to mark up manuscripts because it has tons of bells and whistles that make it super helpful for communicating with the writer. Unfortunately, it can be a bit of a beast for the uninitiated.
Why do we track changes
The good thing about Track Changes is that it records every edit without making anything permanent. You can move, copy, delete and insert text, change formatting, even change pictures and insert objects. And the person who sent you the document can see the changes you made and decide whether to accept or reject them.

Editors and reviewers should never become co-authors of a manuscript under review. While the author is in the process of correcting the identified issues during the review, the editors and reviewers should not initiate working on the same problem themselves.

On the Review tab, select Track Changes. When Track Changes is on, the section is highlighted. Deletions are marked with a strikethrough, and additions are marked with an underline. Different authors' changes are indicated with different colors.

As a courtesy, I do recommend that you always use Track Changes when amending another person's work. But rather than adding layer after layer of changes as you move through the drafts, save your latest draft as a tracked draft and create a new clean file with all the previous changes accepted.

How do I hide edit history
I'm afraid it isn't possible to hide or remove edit history in a document. If you don't want that to be seen by someone you share the document with, you would need to make a copy of the document and share the copy instead. Edit history from the original document isn't transferred to a copy.
Can anyone see the history after deleting it
Deleting and disabling your history does NOT make you invisible to Google. If you delete and disable your search history, you are not invisible to Google—especially if you maintain an account for using various Google apps and services, such as Gmail and YouTube.
