It uses a combination of the most dominant colors from your wallpaper and applies it as a theme/accent color to all supported apps UI. I believe there's no way to customize/disable, it at present. You can change the wallpaper to one that has your most preferred color or try using live wallpapers.

That's part of android 12 color theming,There's no option to turn it off for now. Workaround : use a wallpaper with majority of color to be blue or black(as the standard theme in the apps are greyish/blue, then there won't be a tint, or atleast not visible enough to disturb.
